Recipe Ingredients for Cauliflower Puree

3 lbs cauliflower
8 oz potato
58 g lemon
1 teaspoon extra-virgin olive oil
1 kosher salt

Recipe Directions for Cauliflower Puree

  1. Mix cauliflower florets, peeled and diced potato and zest of the lemon together and steam, covered, until vegetables are very tender, about 15 minutes.

  2. Puree the vegetables in a blender or food processor with the olive oil and a couple of tablespoons of water until smooth and creamy. Season with salt and pepper if desired.
