Recipe Ingredients for Cauliflower Puree with Parmesan and Thyme (4 servings)

2 cups 1% milk
1/2 tsp sea salt
2 1/4 lbs cauliflower
1 tsp ground thyme
1 Freshly ground white pepper
1/4 cup grated parmesan
1 tbsp sour cream

Recipe Directions for Cauliflower Puree with Parmesan and Thyme (4 servings)

  1. Bring milk to a boil in a large pot

  2. Add half the salt, cauliflower and thyme

  3. Reduce heat to medium and partially cover the pan so that the milk doesn't boil over

  4. Simmer for 10-12 minutes until cauliflower is very tender

  5. Strain in a colander, reserve the milk and let stand for 10 minutes until well drained

  6. If fresh thyme has been used, discard the thyme bunch

  7. Place cauliflower florets in the bowl of a food processor and process with a steel blade until coarsely chopped

  8. Add the balance of the salt, pepper, parmesan and 2 tbsp of the reserved milk

  9. Process for another 30 sec until very smooth

  10. Add a bit more of the reserved milkj to the desired consistency, if needed

  11. Puree can be prepared a day in advance.

  12. When ready to serve, place puree in a medium sauce pan and heat over medium heat until very warm, stirring frequently

  13. Add the sour cream and stir until well incorporated

  14. Transfer puree to a serving bowl and serve immediately
