Recipe Ingredients for Cauliflower Potato Soup

1 head, medium (5-6" dia) Cauliflower
2 potato small (1-3/4 to 2-1/2" dia) Potatoes, White, Flesh And Skin
1 cup, sliced Onions
4 cup Chicken Stock
2 oz Natural Chunk Cheese - 2% Reduced Fat - Sharp Cheddar
1 tbsp Oil, Vegetable Corn, Salad Or Cooking
2 tbsp chopped Chives

Recipe Directions for Cauliflower Potato Soup

In a large nonstick saucepan heat oil, saute onions until tender. Add cauliflwoer stock and potatoes, bring to a boil. Cover, reduce heat and simer for 25 minutes. Cool. transer to a food processor or blender and puree until smooth. Retun to saucepan and heat. Serve topped with cheese and chives Serves 6 per serving: 99 calories, 6g protein, 5g fat, 8g carb, 560 mg sodium, 5mg cholesterol, 2g fibre
