Potato Salad style cauliflower. 2/3 cup servings

Recipe Ingredients for Cauliflower Potato Salad.

32 oz Cauliflower
12 oz Mayo Fat Free Mayonnaise Dressing
4 oz Fat Free Sour Cream
9 tsp or 1 packet Mustard, Prepared, Yellow
1/2 pkg Ranch Style Dressing
1/2 tsp Salt, Table
4 green onions
2 stalk, medium (7-1/2" - 8" long) Celery
6 large Egg, White
2 tablespoon Dill
2 tbsp Parsley
1 tsp Paprika
2 oz Rice Vinegar

Recipe Directions for Cauliflower Potato Salad.

  1. Place cauliflower in large bowl.

  2. Add 1/3 cup water

  3. Cover and microwave 6 to 8 Min.

  4. Drain excess water.

  5. Put 2 cups of the cauliflower in a blender and set the rest aside

  6. Add mayo, sour cream, mustard, ranch dip mix, 1/4 tsp salt.

  7. Puree or pulse till blended.

  8. To the bowl with the remaining chopped cauliflower add the remaining celery, hard boiled egg whites, green onion, dill, 2 tbsp parsley, and rice vinegar

  9. Add the pureed mixture and slightly stir to coat.

  10. Chill for several hours before serving.

  11. Garnish with paprika and additional parsley.

  12. Note, this is quite moist, half of the sour cream and mayo would work.
