Use Cauliflower instead of potatoes to make a low-carb side dish

Recipe Ingredients for Cauliflower "Potato" Salad

4 cups steamed cauliflower
4 hard-boiled eggs
4 medium stalk celery, minced (including leaves)
1/3 cup mayonnaise
1 brown or yellow brown mustard
2 tablespoons dill relish
1 Salt and pepper
1 tablespoon chives
1 tablespoon dill weed

Recipe Directions for Cauliflower "Potato" Salad

Just like any other potato salad receipe, except I dice a head of cauliflower into bit size peices and steam in microwave in a glass bowl covered with plastic wrap for 4 minutes. No extra water needed to steam.
