Substitute other veg but always must have 1 potato to thicken.

Recipe Ingredients for Cauliflower and Potato Curry

2 cup, chopped Cauliflower
1 large (3" to 4-1/4" dia.) Potatoes, Boiled
1 clove Garlic
1 carrot (7-1/2") Carrots
1 tablespoon olive oil
1 onion

Recipe Directions for Cauliflower and Potato Curry

  1. 1 Clove Garlic -- minced

  2. 1/2 t Ground Coriander

  3. 1/2 t Ground Turmeric

  4. 1/4 t Ground Cumin

  5. 1/4 t Ground Ginger

  6. 1/8 t Dry Mustard

  7. 1 t Ground Red Pepper

  8. 1 c Water

  9. 1 Potato -- diced (unpeeled Ok)

  10. 1 c Cauliflower -- chopped

  11. 1 Carrot -- sliced

  12. 1/4 t Salt

  13. 1/2 T Curry Powder

  14. Fry, stirring often to coat potatoes with seasonings. When potatoes are almost tender, add last 4 ingredients. Cover and simmer until veg are tender.
