This cauliflower pizza is amazing and the great part is that you can eat pizza without eating that fattening bread. This recipe is a modified version of "Healthy in a Year"s recipe (http://healthyinayear.tumblr.com/post/1981993566/i-just-made-a-pizza-crust-out-of-cauliflower) but to make it more healthy I didn't use cheese for the crust. Note: I've set the serving size for this recipe at 2 servings, but one should note that the size of the entire pizza will be slightly smaller than a regular-sized pizza, so some might be able to eat the entire pizza by themself ;)

Recipe Ingredients for Cauliflower pizza (crust only!)

200 grams Cauliflower
2 1/2 large Egg, White

Recipe Directions for Cauliflower pizza (crust only!)

  1. Preheat the oven to 220 degrees (450 degrees fahrenheit)

  2. Grate the cauliflower (iit should look a bit like rice). Cover riced cauliflower and cook in microwave for 2 minutes

  3. Mix in egg whites (or similar egg substitute).

  4. Spread the mixture on a piece of parchment paper or a baking sheet. Optional: sprinkle with oregano. Cook crust in oven for about 15 minutes - it should be almost completely baked, but not entirely.

  5. When cooking time is finished all you need to do is add your favorite toppings and bake it in the oven until the crust is firm and the toppings are warm.

  6. TIP! My favorite toppings include: chopped tomatoes with lots of spices (my low-cal version of pizza sauce), mixed lettuce leaves and slices of green or red bell pepper. Or slices of ham and diced green bell pepper. Another thing that taste great - but are slighty higher in calories - is sliced chicken breast (w/o skin), diced red bell pepper and finely chopped fresh garlic.
