Recipe Ingredients for Cauliflower Pilaf

1 head, large (6-7" dia) Cauliflower
2 tbsp Extra Virgin Coconut Oil
0.6 cup Apricots
1 miniature box (.5 oz) Raisins, Seedless
2 tbsp Pine Nuts, Pignolia, Dried
6 clove Garlic
0.5 medium (2-1/2" dia) Onions

Recipe Directions for Cauliflower Pilaf

Pulse the Cauliflower in a food processor. Sautee up all the other ingredients in a large saucepan + spices. Toss cauliflower rice in and cook for an additional 5-7 mins. Serve Hot!
