Vegetarian Risotto with baked cauliflower

Recipe Ingredients for Cauliflower & Pea Risotto

250 grams Risotto
1 large Onions
2 Cube Chicken Stock Cubes
1 head, medium (5-6" dia) Cauliflower
2 tbsp Olive Oil
0.3 cup Parmesan, Grated Cheese
0.3 cup Ricotta, Whole Milk Cheese

Recipe Directions for Cauliflower & Pea Risotto

break the cauliflower into small florets, toss in olive oil, salt and pepper and roast for 20 minute until just coloring. Cover in parmesan and cook another 5 mins. Remove. Meanwhile make the risotto and at the final stage, add the frozen peas and cook, then stir through the cauliflower and serve.
