Recipe Ingredients for Cauliflower Pasta Crisp

1 head cauliflower
1 T extra virgin olive oil
4 cloves garlic
1/2 c chopped scallion
1/2 c tahini
1 T cumin
1 tsp paprika
1/4 tsp cayenne pepper
1 tsp sea salt
2 tsp flour
1 1/2 c unsweetened soy milk
1 c walnuts
1/4 c nutritional yeast
2 tsp lemon zest
1 tsp dried thyme
1/2 tsp ground pepper
1 tsp sea salt
1 c panko bread crumbs
2 T extra virgin olive oil
1 tsp buttery spread
12 oz whole wheat rotini

Recipe Directions for Cauliflower Pasta Crisp

  1. To make the cauliflower sauce: place the cauliflower florets in a large-size saucepan and cover with water. Bring to a boil, and cook until the florets are tender, about 10 minutes. Drain well.

  2. In a medium-size saucepan, cook the oil, garlic, and scallion over medium heat for about 2 minutes, until fragrant.

  3. Add the tahini, cumin, paprika, cayenne, salt, and flour. Cook for 1 minute.

  4. Whisk in the milk and cook, just until it begins to thicken.

  5. Combine the florets and sauce in a blender, or use an immersion blender, and puree until smooth.

  6. To make the topping and pasta blend the nuts, nutritional yeast, zest, thyme, pepper, and salt in a food processor until a coarse meal forms.

  7. In a medium-size bowl, combine the resulting coarse meal with the bread crumbs. Using a fork, coat the bread crumbs with the oil.

  8. Preheat the oven to 350. Lightly coat a 9x13 inch baking dish with butter.

  9. Cook the pasta according to package directions until just al dente, scooping out some of the cooking water to thin out the sauce if it needs it. Drain and return to the pot.

  10. Stir the cauliflower sauce into the pasta, adding some of the etra liquid if it is too thick.

  11. Pour into the baking dish, sprinkle the bread crumb topping over evenly, and bake for 15 minutes, until the topping is golden brown.

  12. Let stand for at least 15 minutes before serving.
