It tastes like mashed potatoes, looks and feels like mashed potatoes but really is cauliflower!!

Recipe Ingredients for Cauliflower Mashed Potatoes

32 oz cauliflower, boiled without salt
125 grams Skim Milk Fat Free
1 tbsp Garlic Powder
2 tsp Pepper, Black

Recipe Directions for Cauliflower Mashed Potatoes

  1. Boil the ridiculous amount of cauliflower (really one head, but I couldn't figure out how to put that into CC so I just said 2 lbs) for about 10 minutes (until it's really soft and easy to squish)

  2. Next, put the cauliflower and the 1/2 cup of milk into a blender or food processor with your favorite mashed potato seasonings and fluff with a fork once it looks like mashed potatoes.

  3. Serve with butter or (my favorite) a little bit of plain greek yogurt and parmesan cheese and enjoy!
