Mashed potatoes w/cauliflower to reduce the carbs.

Recipe Ingredients for Cauliflower - mashed potatoes

2 large potatoes
16 oz cauliflower florets
3 tbsp light margarine
1/2 c 1% milk

Recipe Directions for Cauliflower - mashed potatoes

  1. Peel, dice and boil potatoes until semi-soft.

  2. Add frozen cauliflower florets and continue to boil until soft.

  3. Place in large bowl with margarine and milk.

  4. Use mixer and mix on medium speed until smooth.

  5. Add salt and pepper to taste.

  6. Each serving is about 1/4 cup.
