Not really mashed potatoes... but a tasty substitute.

Recipe Ingredients for Cauliflower Mash

2 head, medium (5-6" dia) Cauliflower

Recipe Directions for Cauliflower Mash

  1. Steam or boil cauliflower until very tender.

  2. Add butter.

  3. Puree in food processor or with immersion blender until smooth. Won't end up quite as fluffy as mashed potatoes, but should have a good texture.

  4. Add salt & pepper to taste. Garlic, of course, is another great addition.
