From "food.com" This is a very good soup, if you cannot have any meats in your diet. It is highly nutritious, high in fiber and iron.

Recipe Ingredients for Cauliflower and Leek Soup

28 oz Chicken Broth
215 gram leeks, white and tender green parts only
2 tsp extra-virgin olive oil
325 gram Russet Potato
1 1/2 tsp curry powder
6 cups cauliflower florets
1 cup water
5 gram bay leaf
1 tsp sea salt
1/2 tsp freshly ground black pepper

Recipe Directions for Cauliflower and Leek Soup

  1. Cook the leeks in the olive oil until soft, about 7 minutes, stirring frequently.

  2. Peel and coarsely chop the potato. Add to the leeks together with the curry powder, cook for about 3 minutes, stirring often.

  3. Add the cauliflower, 99% fat-free chicken broth, and 2 1/2 cups of water along with the bay leaf. Bring to boil, reduce heat to simmer and cover.

  4. Cook until vegetables are soft, about 30 minutes.

  5. Remove 1 cup of the liquid and pour it into a small saucepan. Bring to a boil, cook until reduced to 3 TBS.

  6. Puree the remaining soup in several batches.

  7. Add the reduced broth to the soup. Season with the sea salt and black pepper.

  8. To serve: Ladle soup into bowl, and if desired, top with 1 TBS yogurt, which you would swirl lightly into the top of the soup. Enjoy!
