Pizza Bites!!! Healthy!!! Ingredients: One Medium Head of Cauliflower Chopped and Grated (not too fine) 2 tbsp fresh shredded Parmesan 2 tbsp reduced fat dry grated Parmesan 1/4 cups Sargento Reduced Fat 4 Cheese Italian Blend Shredded Cheese 6 oz Liquid Egg Whites 1/2 packed McCormick's Italian Meatball Seasoning 6 cherry tomatoes 17 turkey pepperonies 2 cups Amy's Chunky Tomato Bisque for dipping

Recipe Ingredients for Cauliflower Italian Parmesan Pizza Bites and Dipping Sauce

0.85 head, medium (5-6" dia) Cauliflower
2 tbsp Parmesan Cheese
2 tbsp Parmesan Cheese reduced fat
6 tsp dry mix Seasoning Mix
1/4 cup Reduced Fat 4 Cheese Italian Shredded Cheese
6 oz 100% Liquid Egg Whites
17 slices Sliced Turkey Pepperoni
6 cherry Tomatoes, Red, Ripe
2 cup Organic Chunky Tomato Bisque

Recipe Directions for Cauliflower Italian Parmesan Pizza Bites and Dipping Sauce

  1. PreHeat Oven to 450 deg F

  2. Spray Muffin Tray with Olive Oil

  3. Chop Cauliflower and grate/blend until no large chunks remain - do not over process

  4. In same blender/food processor add egg whites, all cheeses, seasoning, turkey pepperoni, cherry tomatoes and blend

  5. Mix this in with the grated cauliflower

  6. Pour into muffin tray (only 2/3-3/4 full as they will rise slightly due to egg whites)

  7. Bake for 25-35min, should brown on the edges and slightly brown on top meaning they have cooked through

  8. Allow to cool 5min after you remove them from the oven.

  9. Slide out of tray and serve with heated Amy's Tomato Bisque as the PERFECT organic dipping sauce -- enjoy your healthy pizza bites!!!
