great side dish or light entree. If an entree - enough for 2 - it could use another egg.

Recipe Ingredients for cauliflower gratin

2 cups cauliflower
1 leek
3 cloves garlic
1 oz cheddar cheese
1 egg
1/2 cup milk
1/2 tbsp butter
1/2 tbsp canola oil
2 tbsp seasoned bread crumbs

Recipe Directions for cauliflower gratin

  1. Cut leeks in thin rings. cut cauliflower.

  2. boil cauliflower for 4 minutes

  3. saute leeks in butter, then add garlic after a few minutes. Add oil if leeks start to stick.

  4. Layer cauliflower in casserole dish. Top with leek mixture.

  5. beat an egg with milk. pour over veggies. sprinkle some salt and pepper.

  6. sprinkle some shredded cheese, then some bread crumbs then some more cheese.

  7. bake at 375 for 20 min or until set/lightly browned.
