Recipe courtesy of George Stella. Omit butter for even ligher results. The key is to get the cauliflower really dry after cooking.

Recipe Ingredients for Cauliflower Garlic Mash

2 cups cauliflower
1 1/2 tbs low fat cream cheese
1/4 cup grated parmesian cheese
1 tbs minced garlic
1/2 tsp salt
1/2 tsp chives for garnish

Recipe Directions for Cauliflower Garlic Mash

  1. Clean and cut cauliflower into small pieces.

  2. Add to pot of boiling water. Cook for 6 minutes or untill well done. Drain well, do not let cool; pat dry with paper towels.

  3. In a bowl with an imersion blender or food processor, puree hot cauliflower with all other ingridients until almost smooth.

  4. Garnish with chives.
