A MUCH lighter (but surprisingly creamy & delicious) alternative to mashed potatoes.

Recipe Ingredients for Cauliflower Faux Mashed Potatoes

4 cups cauliflower
1 tbsp. fat-free cream cheese
1 tsp. black pepper
1/4 tsp. salt
1 tsp. grated parmesan cheese
1 clove garlic

Recipe Directions for Cauliflower Faux Mashed Potatoes

  1. Boil cauliflower until soft.

  2. Strain cauliflower and remove to food processor.

  3. Add all ingredients to cauliflower.

  4. Pulse until creamy & smooth.

  5. Serve. =)
