Cauliflower crust for pizza and other "bread" needs.

Recipe Ingredients for Cauliflower Crust

1 head, medium (5-6" dia) Cauliflower
2 egg whites
1/2 cup grated parmesan cheese

Recipe Directions for Cauliflower Crust

  1. Cut cauliflower into florets.

  2. Boil for 5-7 mins or until fork can easily mash.

  3. Strain.

  4. Place into ice water.

  5. Strain again and dry well (with paper towels).

  6. Place in food processor till it resembles grain or couscous.

  7. Add 2 egg whites and 1/2 cup Parmesan cheese (salt and pepper to taste).

  8. Heat baking stone to 500 degrees.

  9. Put cauliflower mixture into pan with edges and place on baking stone. (Make sure it's not too wet?use paper towels to soak water off the crust if needed.)

  10. Cook at 400degrees for 30 minutes.

  11. Broil for 2-3 minutes or until lightly brown.

  12. Cool and store or use as base for pizza.
