Easy caserole-like dish that keeps well in the fridge, and reheats well for lunches

Recipe Ingredients for Cauliflower chicken curry

575 g cauliflower (1 medium head, cut into florets)
12 oz mushrooms, chopped
1/3 c shallots, finely diced
1 T olive oil
1 1/2 lb boneless, skinless chicken breast, cut into bite-sized chunks
6 oz cheddar cheese, shredded
1 can cream of mushroom soup, campbell's healthy request
1/2 c hellman's light mayonnaise
1/4 c fat free sour cream
1/2 c chicken broth, low fat, low sodium
1/4 c mild curry powder
1 clove garlic, pressed

Recipe Directions for Cauliflower chicken curry

  1. Preheat oven to 350

  2. Briefly steam the cauliflower (3-4 minutes from turning on the heat), just until it barely gives when poked with a fork. It will cook more in the oven.

  3. Saute the shallots in the olive oil until soft and golden, add the mushrooms and cook until they release moisture. Remove these to a separate bowl.

  4. Add the chicken pieces to the pan, and add the garlic when the chicken is partly cooked, cooking until the chicken is no longer pink in the middle.

  5. In a separate bowl, combine the condensed soup, sour cream, mayonnaise, chicken broth, and curry powder. Stir until well-combined.

  6. Add about 4 oz of the shredded cheddar cheese, reserving the rest for topping. Fold in the cheese, followed by the mushrooms and shallots (as well as any juice accumulated in the bottom).

  7. Stir in the chicken chunks and cauliflower, and ensure all pieces are well-coated and evenly distributed.

  8. Pour mixture in to a 13x9 inch pan, sprinkle with remaining cheese, and bake at 350 F for 30 minutes. Turn the oven up to 425 for 5 more minutes to get the cheese to brown a bit.

  9. Serve with rice.
