Recipe Ingredients for Cauliflower Cheese with a Twist

265 grams Cauliflower
300 grams 2% partly skimmed milk
35 grams cornstarch
12 grams mustard
82 grams cheddar cheese
10 grams Parmesan
50 grams water
10 grams bread crumbs

Recipe Directions for Cauliflower Cheese with a Twist

  1. Grate the cheddar cheese, prepare cauliflower for cooking.

  2. Cook cauliflower until just tender and strain.

  3. Blend cornstarch, a heaped teaspoon of wholegrain mustard and water to a smooth paste. Add milk stirring to avoid lumps. Cook on a slow heat until it thickens, remove from heat and add approx 3/4 of the grated cheddar cheese.

  4. Put the cauliflower in an ovenproof dish and pour the cheese sauce over.

  5. In a bowl combine the remaining cheddar, Parmesan cheese and bread crumbs. Sprinkle over the cauliflower and cheese sauce, pop into a pre warmed oven at 180c cook for 25 to 30 minutes until the topping is golden and crunchy. Serve after resting for five minutes.
