A delicious soup that takes only 1/2 hr to make

Recipe Ingredients for Cauliflower and Cheese Soup

1 cup of onion
700 g cauliflower
2 1/2 cup 2% milk
2/3 cup stock
2 cups of water
3/4 cup reduced fat cheddar cheese

Recipe Directions for Cauliflower and Cheese Soup

  1. Put onion, cauliflower, milk, bay leaf and vegetable stock in a pot. Bring to a boil, then reduce heat. Cover and simmer until cauliflower is tender.

  2. Remove bay leaf from the soup. Pure the 3/4 of the soup, and add back into the soup. Warm back up.

  3. Add cheese and stir until melted. Serve.
