caulflower & leeks in a cheese sauce

Recipe Ingredients for Cauliflower Cheese

500 g cauliflower
200 g leeks
35 g parmesan cheese, grated
35 g cheddar cheese, grated
5 tbsp cornflour
250 ml skim milk
250 g yoghurt, fat free

Recipe Directions for Cauliflower Cheese

  1. Blanch cauliflower & leeks. Heat milk with parmesan.

  2. Mix cornflour into paste with water then stir into milk until thick. Stir in yoghurt.

  3. Put veg in ovenproof dish and pour over cheese sauce. Scatter with cheddar.

  4. Bake at 180C until browned & bubbling.
