Kind of a cauliflower gratin with 15% cream.

Recipe Ingredients for Cauliflower Cheese

300 g Cauliflower cut into pieces
1 T Butter
1/4 c Cream
1/2 c half and half
1 clove garlic, minced
80 g Cheddar cheese
28 g Parmesan, grated
1/8 t salt
1/8 t freshly ground black pepper
1/8 t nutmeg
1/2 t Dried Mustard

Recipe Directions for Cauliflower Cheese

  1. Preheat the oven to 350 degrees F.

  2. Bring a large pot of salted water to a boil over high heat. Blanch the cauliflower for 4 minutes. Drain & Transfer the cauliflower to a buttered 9 by 13-inch baking dish and let cool, about 5 minutes.

  3. Melt the butter in a saucepan over low heat. Slowly add the cream & then the garlic cloves, stir and thicken. Turn off heat. Add the parmesan, cheese, salt, pepper, nutmeg, and mustard powder. Stir to combine.

  4. Pour the sauce over the cauliflower to cover and sprinkle with cheese.

  5. Bake until the cauliflower is cooked, about 25 minutes and cheese is lightly browned and bubbly.
