Yummy salad to enjoy with a veggie burger on a hot summer day!

Recipe Ingredients for Cauliflower & Carrot Salad

2 lbs Cauliflower (med head), cut into florets
3 medium Carrots, cut diagonal 1/2" thick
1/8 tsp Salt
2 tbsp Extra Virgin Olive Oil
3 tbsp Apple Cider Vinegar
1 tsp Sugar
1/2 tsp dried Oregano
1/4 tsp dried Thyme
1/4 tsp Red Pepper Flakes

Recipe Directions for Cauliflower & Carrot Salad

  1. Heat oven to 450 degrees.

  2. Toss cauliflower, carrots and salt with 1 tbsp olive oil on a rimmed baking sheet coated with cooking spray. Roast until tender, 18-20 minutes.

  3. Whisk together vinegar, sugar, oregano, thyme, pepper and remaining 1 tbsp oil in medium bowl. Toss in veggies. Cool to room temp.

  4. Enjoy!
