Cauliflower Broccoli Soup Recipe

Indian-inspired work in progress. Traditionally this would include ginger but I left it out. May add diced tomatoes at the end of cooking with the lentils, and a touch of plain lowfat yogurt or lite coconut milk.

Recipe Ingredients for Cauliflower broccoli soup

3 small onions, chopped
1 c. celery, chopped
1 c. carrots, chopped
1 tbsp. olive oil
2 c. cauliflower, chopped
2 c. broccoli, chopped
1 medium potato, peeled and chopped
1 tsp. garlic, diced
2 tsp. turmeric
1/2 tsp. cumin seed
1/2 tsp. black mustard seed
1/2 tsp. fenugreek seeds
2 c. lentils
1 pinch hing (asafoetida)

Recipe Directions for Cauliflower broccoli soup

Saute onions, celery and carrots in olive oil. Add garlic. Add cauliflower and broccoli, potato, and water to fill four quart pan. Combine spices in spice grinder and add to pot (or use spices whole, sauteeing in oil before adding onion). Cook until vegetables are tender and puree with immersion blender. Add lentils and asofoetida. Salt and pepper to taste.
