Curry-flavoured vegetable fritters

Recipe Ingredients for Cauliflower & Broccoli Fritters

1/2 c all purpose flour
1/2 c corn starch
1/2 tsp baking soda
2 tsp curry powder
2 tsp turmeric
1 tsp salt
1 tsp finely chopped fennel seeds
1 tsp minced fresh ginger
4 eggs
6 tbsp water
300 g cauliflower
300 g broccoli
6 tbsp canola oil

Recipe Directions for Cauliflower & Broccoli Fritters

  1. Mix flour with soda, spices, seasonings, ginger and eggs and water to form a smooth, thick batter. Cut vegetables into chunks and pulse to a fine couscous-like crumb in a food processor. Mix vegetables into batter to evenly combine; the mixture will be very thick.

  2. Heat 2 tbsps oil in a frypan and cook small spoonfuls of mixture, flattening gently with a spatula. Cook over medium heat until golden and cooked through, about 2 minutes each side, flipping as bubbles form. Place cooked fritters on paper towels to absorb excess oil. Add a little more oil to pan between batches.
