Great way to sneak in a vegetable on a picky kid!

Recipe Ingredients for Cauliflower "Biscuits"

1/2 head cauliflower, shredded
1 egg
1/2 c parmesan cheese
1/2 c shredded sharp cheddar cheese
1/2 tsp finely minced garlic
1/4 tsp minced onion
1/2 tsp Italian Herb Seasoning

Recipe Directions for Cauliflower "Biscuits"

  1. Pre-heat oven to 450.

  2. Shred half a head of cauliflower. I prefer to use the shredder attachment on the food processor.

  3. Microwave the shredded cauliflower for 8 mins to soften.

  4. Let it cool slightly then add the remaining ingredients. Note: you may want to omit the italian seasoning and go with Old Bay instead. Mix well.

  5. Spoon onto a parchment paper lined baking sheet and flatten into about a 1/4" thick biscuit.

  6. Spray tops with cooking spray and bake 10 mins.
