Indian home recipe for mixed veg curry

Recipe Ingredients for Cauliflower aubergine curry

2 tsp oil
1 tsp cumin
1 tsp ginger paste
1 tsp garlic paste
1/2 tsp turmeric
1 1/2 tsp salt
150 g cauliflower
340 g potatoes
240 g aubergines
200 g tomato
400 ml water

Recipe Directions for Cauliflower aubergine curry

  1. Heat the oil. Add cumin and let it crackle. Add ginger garlic paste and fry for 30 seconds. Add tomatoes and fry for a few minutes.

  2. Add potaotes, cauliflower and aubergines and fry for a few minutes. Add the rest of the ingredients. Stir. Add the water and bring to a boil. Cover and simmer till done.
