A tasty vegan option. It's also quite good and VERY low fat! Boil the cauliflower until very tender. Strain and set aside. Sautee garlic and onion or 2 shallots in olive oil for 3 min or until they are very tender. Add all ingredients,except salt, to blender. Blend until smooth and fluffy. Salt to taste!

1 1/2 head cauliflower
1 tbsp olive oil
1 medium white onion
4 cloves garlic
6 tbsp pesto
2 tsp salt
