Cantenaar cheese, avocado, tomato, zucchini omelet

Recipe Ingredients for CATZ 2-Egg Omelet

2 eggs
1 tsp butter
1 tsp olive oil
1/2 small avocado, cubed
1/2 medium tomato, chopped
1/2 medium zucchini, grated
1 T. onion, chopped
1 oz. cantenaar cheese

Recipe Directions for CATZ 2-Egg Omelet

  1. grate cheese

  2. cube avocado

  3. chop tomato

  4. grate zucchini

  5. chop onion

  6. Mix eggs with 1 T. water. Add butter and oil to med-hot frying pan. Add egg mixture and swirl to coat bottom of pan. Pull sides of omelet to centre of pan until there is no more runny egg.

  7. Lay vegetables over half of the omelet, cover, and turn off heat. Let sit for approximately 3 - 5 minutes.

  8. Fold and slide onto plate to serve.

  9. Yeild 1 serving
