My Favorite Oatmeal cookie, converted to low-fat / low sugar. To serve with Lemon pudding, switch brown sugar to white.

Recipe Ingredients for Cathy's Oaties

136 grams whole wheat flour
170 grams oats, rolled
144 grams brown sugar
1 teaspoon vanilla
1 egg white
3/4 cup Margarine Non Hydrogenated Low in Saturated Fat
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup raisins

Recipe Directions for Cathy's Oaties

  1. Heat oven to 375'

  2. In Large bowl beat sugar & margarine until fluffy, add vanilla & egg just until blended.

  3. Blend dry ingredients together, then add 1/3 portion just until blended.

  4. Spread evenly in 13 x 9 pan, bake about 23 minutes, or until center only jiggles slightly.

  5. Cool No More than 5 minutes, cut & serve about 18 bars.
