Recipe Ingredients for Cathy's creamy black bean soup

1 cup Black Beans
0.33 medium (2" dia, 5" long, raw) Sweetpotato
1 medium Carrots
3 tbsp chopped Onions
0.25 avocado, NS as to Florida or California Avocados
2 serving Extra Virgin Olive Oil
2 clove Garlic
1 g Seasoning

Recipe Directions for Cathy's creamy black bean soup

Put oil in skillet heat add grated garlic, chopped onion & carrot sautee til tender. Add cubes avocado & sweet potato with water. Simmer until potato is somewhat soft. Add packet Saxon seasoning and black beans. Simmer 20-30 min add more water if neccesary Reduce heat stir in sour cream & serve May top with shredded cheese. Variation add chorizo
