From the Anchorage Daily News food section, 2005. Works with most any white fish. Firmer fish should be cut into smaller pieces.

Recipe Ingredients for Catfish soup

4 strips bacon
2 small red onions
2 stalks celery
1 carrot
2 cloves garlic
1/2 teaspoon salt
1 black pepper
1/2 teaspoon hot pepper flakes
29 ounce chicken broth
16 ounce clam juice
14 1/2 ounce diced tomatoes
1/2 head cabbage
1 bulb fennel
1 cup okra
1 1/2 cup brown rice
1 pound catfish

Recipe Directions for Catfish soup

  1. Dice the bacon and fry crisp in a large dutch oven. Set aside.

  2. Chop the onion, celery, and carrot. Mince the garlic.

  3. Fry the vegetables in the dutch oven, in little of the bacon grease, until soft and fragrant.

  4. Core and chop the half-head cabbage. Chop the fennel bulb.

  5. Add chopped vegetables and remaining ingredients, except rice and fish, to the dutch oven. Simmer until vegetables are tender, about 15 minutes. Meanwhile, cook or steam the rice as package directs.

  6. Cut the fish in bite-size pieces. Add the fish to the soup and cook gently until fish is cooked, 5 or so minutes.

  7. Serve over rice.
