Recipe Ingredients for Catfish Curry

1 pound catfish, cut into 2 inch chunks
1 tablespoon oil
1 tablespoon green curry paste
10 cloves garlic, mince
1 1/2 green pepper, chopped
3 cups asparagus, chopeed
3 tablespoons brown sugar
2 tablespoons soy sauce
1/4 c. water
1 cup basil leaves

Recipe Directions for Catfish Curry

Heat oil in wok over medium-high heat. Add catfish and stir fry until cooked. Remove with slotted spoon. Add garlic to pan, stir fry 1 minute, add curry paste, stir fry 1 minute. Add brown sugar and water, stir until dissolved. Add veggies and stir fry until crisp-tender. Add soy sauce and catfish, stir 1 minute. Add basil and cook until wilted. Serve with rice.
