Recipe Ingredients for Cast Iron Camp Oven Mountain Man Breakfast

1 lb. turkey bacon (Trader's Joe's preferably)
10 medium potatoes (sliced)
2 medium yellow onions (diced)
12 egg whites (beaten)
3 egg yolks (beaten with the egg whites)
1 1/2 cups fresh mushrooms (sliced)
1 dash salt
1 dash pepper (to taste)
1 green bell pepper (diced)
3 cups Cheddar cheese (grated)
3 cloves garlic (minced)
1 dash picante sauce

Recipe Directions for Cast Iron Camp Oven Mountain Man Breakfast

  1. Heat a 12" Dutch oven using 18-20 briquettes bottom until hot. Cut bacon into 1 inch slices. Add to Dutch oven and fry until somewhat brown.

  2. Add onion, mushrooms, bell pepper and saute until onions are translucent.

  3. Add potatoes and season with salt and pepper.

  4. Cover and bake using 8 briquettes bottom and 14-16 briquettes top for 30 minutes.

  5. Season eggs with salt and pepper then pour eggs over top of potatoes.

  6. Cover and bake another 20 minutes.

  7. Stir gently every 5 minutes.

  8. When eggs are done, cover top with cheese and replace lid. Let stand until cheese is melted.

  9. Serve topped with picante sauce.

  10. Serves: 10-12
