Recipe Ingredients for Cass's Fish Roll-Ups

284 grams spinach, steamed
1 small onion, chopped
1 tablespoon Becel Regular Margarine
1 cup chopped mushrooms
1/4 cup bread crumbs
400 grams sole fillets

Recipe Directions for Cass's Fish Roll-Ups

  1. Steam spinach until tender, drain well.

  2. In small skillet on med-hi cook onion in margarine for about 5 minutes or until brown. Add mushrooms, cook for 3 minutes.

  3. In food processor combine spinach, onion mixture and bread crumbs. Process until coarsely chopped.

  4. Season fish with pepper, thyme and sprinkle with lemon juice.

  5. Spread spinach mixture on each fillet and roll up, fixing each roll together with a toothpick.

  6. Place seam side down on a lightly oiled cookie sheet and bake at 425F for 15 minutes or until fish flakes easily with a fork.

  7. Remove toothpicks and serve.
