Recipe Ingredients for Cass's Beef Pot Roast

950 grams beef roast
4 cloves garlic
1 teaspoon oregano
1 teaspoon basil
1/8 teaspoon pepper
2 cups chopped carrots
2 cups chopped parsnip
2 cups chopped onion
2 cups low sodium beef broth
1 cup chopped potato

Recipe Directions for Cass's Beef Pot Roast

  1. Cut slits in the roast and stuff with quartered garlic cloves. Sprinkle with spices and brown in large pot on all sides. Remove to a plate.

  2. Add next 5 ingredients to pot and return roast to pot as well. Bring to a boil and simmer on low for 1 hour or until meat reaches done temperature.

  3. Serve.
