Recipe Ingredients for Cassies "Shepherd's" Meatloaf

1 lb lean ground beef
1 egg
1 large onion, chopped
10 ounce (Cambell's) Tomato soup, condensed
1 1/2 cup frozen mixed vegetables
1/2 cup quick oats, uncooked
2 cups potatoes, boiled, with skin, no salt
1/2 cup shredded cheese

Recipe Directions for Cassies "Shepherd's" Meatloaf

  1. Boil potatoes until tender, drain, mash, and sey aside.

  2. Combine beef, onion, mixed veggies, and oats.Place in loaf pan or small casserole dish.

  3. Place in oven at 325-350 f for 35 minutes.

  4. Remove from oven and top with mashed potaoes.

  5. Return to oven for 10 minutes, drizzle shredded cheese overtop.

  6. Remove from oven and serve.
