CASSEROLE - Chicken Parmesan Casserole

Recipe Ingredients for CASSEROLE - Chicken Parmesan Casserole

2 Chicken, Breast, Meat Only
1 cup Fat Free Italian Dressing
1 cup Broccoli, Cooked
1 cup Carrots
2 cups Pasta Rotini
1 cup Sauce, Pasta, Spaghetti/marinara, Ready-to-serve
19 oz Tomatoes, Red, Ripe
1 cup Mozzarella, Part Skim Milk, Low Moisture Cheese

Recipe Directions for CASSEROLE - Chicken Parmesan Casserole

  1. Fillet chicken (you should end up with 6 pieces)

  2. Marinate chicken fillets in fat free Italian Dressing (or any other fat free dressing you prefer).

  3. Grill chicken until golden brown.

  4. Cook pasta, brocolli & carrots together in one pot until pasta is al dente. Drain.

  5. Pour Pasta in casserole dish.

  6. Combine tomatoes & Spagetti Sauce together (I prefer to mash the tomatoes but you can leave them whole if you like)

  7. Cover pasta with 2/3 of the sauce mixture

  8. Lay chicken pieces over top of pasta

  9. Cover with the remainder of the sauce mixture

  10. Sprinkle top of casserole with mozzarella

  11. Cover

  12. Bake for 45 minutes to 1 hour (until mozzarella begins to brown)
