Recipe Ingredients for Casserole, broccoli, cauliflower, and carrot

5 cup, chopped Broccoli
5 cup (1" pieces) Cauliflower
3 cup slices Carrots
4 large Egg, Whole
8 oz Neufchatel Cheese
8 oz Cream Cheese
16 oz Salad Macaroni
3 teaspoons Salt, Table
1/2 tsp Pepper, Black
6 oz Provolone Cheese

Recipe Directions for Casserole, broccoli, cauliflower, and carrot

  1. Cook 16 oz elbow macaroni 6 or 7 minutes with 2 teaspoon salt. While still firm, drain and rinse with cold water.

  2. Steam 5 cups chopped broccoli, 5 cups chopped cauliflower, and 3 cups chopped carrots with 1 tsp salt.

  3. Mix 4 eggs with 2 packages (16 oz) cream cheese.

  4. In a large bowl, mix steamed vegetables, pasta, and egg-and-cheese mixture.

  5. Add pepper.

  6. Bake 40 minutes at 375 degrees F or until brown at edges.

  7. Add 6 oz grated Parmesan (or mixed provolone and mozarella, or cheddar) cheese.

  8. Bake 5 more minutes at 350 degrees F.

  9. Serve warm.
