Recipe Ingredients for Cashew Lemon Rice

1 cup Cashew pieces
1 cup Brown Rice, Long Grain
1 tbl Olive Oil
1/4 cup Lemon Juice, Fresh
1/2 tsp turmeric
1 tsp mustard seed, brown
1/4 tsp salt or to taste

Recipe Directions for Cashew Lemon Rice

  1. Cook the Brown Rice according to package directions

  2. Allow Rice to cool a bit uncovered

  3. heat 1 TB oil in sautee pan

  4. Add Cashews and stir constantly until toasted in color

  5. Add turmeric & mustard seed, stir until mustards pop

  6. carefully add the lemon juice, quickly stir

  7. turn off the heat

  8. Add the rice and combine everything

  9. salt to tase
