Recipe Ingredients for Cashew Chicken Rotini Salad

16 oz pasta, spiral, dry
4 cups chicken, cooked and cubed
20 oz pineapple tidbits, drained
1 1/2 cups celery, sliced
3/4 cups green onions, thinly sliced
1 cup green grapes, seedless
1 cup grapes, red, seedless
6 oz dried cranberries
1 cup ranch salad dressing
3/4 cup mayo
2 cups cashews, salted

Recipe Directions for Cashew Chicken Rotini Salad

  1. Cook chicken.

  2. Cook pasta according to package directions.

  3. Meanwhile, in a large bowl, combine chicken, pineapple, celery, onions, grapes and cranberries.

  4. Drain pasta and rinse in cold water: stir into chicken mixture.

  5. In a small bowl, whisk the ranch dressing and mayo together.

  6. Pour over salad and toss to coat.

  7. Cover and refrigerate at least 1 hour.

  8. Just before serving, stir in the cashews. Yields 12 servings.
