Steve's great cashew chicken dish. :)

Recipe Ingredients for Cashew Chicken

2 teaspoons cornstarch
1 cup chicken broth
2 tablespoons cornstarch
2 tablespoons soy sauce
2 pounds boneless, skinless chicken breasts
4 tablespoons oil
2 stalks celery
2 carrots
1/2 pound fresh green beans
2 cloves garlic
1 onion
4 tablespoons water
2/3 cup cashews

Recipe Directions for Cashew Chicken

  1. Mix 2 teaspoons cornstarch with chicken broth and set aside.

  2. Cut skinless, boneless chicken in matchstick-size pieces. Combine 2 tablespoons cornstarch, soy sauce and chicken pieces to coat well.

  3. Place wok on high heat. Add 2 tablespoons oil and when hot, add chicken mixture. Stir fry until chicken is opaque, about 3 minutes. Remove chicken and set aside.

  4. Add remaining 2 tablespoons oil to wok and when hot, add celery, beans, carrot and garlic. Stir fry for 1 minute - add 4 tablespoons water, cover and cook for 3 minutes or until crisp tender.

  5. Return chicken and chicken broth mixture to wok with vegies. Stir until liquid boils and thickens. Add cashews.

  6. Serves 6.
