Recipe Ingredients for Cashew cherry pilaf

1 tbsp peanut oil
3 cloves garlic
1 tsp cumin seeds
1 tsp mustard seeds
1/2 tsp salt
1 carrot, chopped
1 cup brown rice
1 tbsp tomato paste
1/4 tsp turmeric
1 tsp garam masala
1/4 cup peas
1/4 cup cashews
1/2 cup dried cherries

Recipe Directions for Cashew cherry pilaf

  1. Saute cumin, mustard in oil. Add garlic & saute.

  2. Add rice & remaining spices, tomato paste, & water. Bring to a boil, cover, and simmer 40 minutes.

  3. Stir in peas, cashews, cranberries, ghee (if desired); cook another 15 minutes.

  4. Fluff and serve.
