Raw vegan cheeze spread. Great on crackers or as a spread on bread with fresh veggies as a sandwich. Nice as a veggie dip as well.

Recipe Ingredients for Cashew Cheeze

24 oz Organic Raw Cashews Nuts
0.66 cup Quinoa, Organic
84.48 oz Distilled Water
3 Teaspoon Juice
100 grams Sea Salt
1 tablespoons Nutritional Yeast
1 tbsp Rosemary, Fresh
3 tsp Thyme, Fresh

Recipe Directions for Cashew Cheeze

  1. Soak the raw cashews for 8-10 hours in clean water.

  2. Drain water.

  3. Put the cashews and rejuvelac in a high speed blender and blend on high until creamy and completely smooth consistency.

  4. Place a collander or large metal strainer basket over a bowl and line the strainer with double layers of cheese cloth.

  5. Put the blended cashew mixture into the cheese cloth and cover over with the excess cheese cloth.

  6. Cover the strainer and bowl with a clean dry tea towel and leave on the kitchen counter to ferment.

  7. After 16-24 hours the cashew mixture should begin to have a cheesey smell and will begin to form a crust.

  8. At this point you can take it out of the cheese cloth, emptying it into a bowl.

  9. Mix in the remaining ingredients well.

  10. Place in an air tight container in the refrigerator for 24 hours to firm up a little.

  11. It will be cream cheese consistency. It is ready for use.

  12. If you prefer a stronger cheese flavor you can ferment it longer.
