This variation of Colleen Patrick-Goudreau's cashew cheese from The Vegan Table is great for shredding on pizza.

Recipe Ingredients for Cashew Cheese

1 1/4 cups raw cashews
1/2 cup nutritional yeast
2 tsp onion powder
1 tsp salt
1 tsp garlic powder
1/8 tsp ground white pepper
3 1/2 cup soymilk
1 cup agar agar
1/2 cup canola oil
1/4 cup miso paste
2 tbsp fresh lemon juice

Recipe Directions for Cashew Cheese

  1. Place cashews in food processor; finely grind. Don't let them turn into a paste. Add nutritional yeast, onion powder, salt, garlic powder, and white pepper. Pulse to blend in spices.

  2. In saucepan, combine milk, agar agar, and oil. Bring to simmer; decrease heat to low-medium and cover. Stir frequently with a whisk and do not let it get too hot so that it scalds. Simmer until agar agar is completely dissolved.

  3. With food processor running, add milk/oil mixture gradually to the cashew mixture. Blend for 2 minutes, or until smooth and creamy. Blend in miso and lemon juice.

  4. Transfer to container that you want to use as a mold (plastic Gladware works great). Let it set for a few hours in the refrigerator. After it sets, it can be removed from the mold and sliced or grated.
