Cashew Broccoli Stir Fry from Cooling Light

Recipe Ingredients for Cashew Broccoli Stir Fry

4 cup Rice, Brown, Medium-grain, Cooked
4 1/2 serving Nasoya Extra Firm Organic Tofu
1 tsp Vegetable Base
1/4 cup Soy Sauce
0.67 serving Argo Cornstarch
1 1/2 tbsp Oil, Sesame
3 cup flowerets Broccoli, Flower Clusters
2 cup, sliced Peppers, Sweet, Red
6 tsp Ginger Root
1/2 tsp Spices Crushed Red Peppers
0.53 oz Organic Raw Cashews Nuts

Recipe Directions for Cashew Broccoli Stir Fry

  1. Cut tofu into strip and place on paper towels. Cover w/ more paper towels and press to remove moisture.

  2. Make 1 cup veg broth with the veg base.

  3. Combine 1/2 c broth, 2 tbsp soy sauce, and cornstarch; Set aside.

  4. Drizzle remaining 2 tbsp soy sauce over tofu strips.

  5. Heat 1 tbsp oil in large nonstick skillet over med-high heat. Add tofu; cook 5-6 min or until browned, turning occasionally.

  6. Remove tofu from the pan; keep warm. Heat remaining 1/2 tbsp oil in same pan. Add broccoli, bell pepper, minced ginger, and crushed red pepper if using. Cook 2-3 min or until broccoli is crisp -tender. Add cornstarch mixture; cook 1 min or until thickened. Gently stir tofu into vegetables. Serve over rice and sprinkle w/ cashews.

  7. 4 Servings of 1 1/4 cups tofu mixture, 1 cup rice and 1 tbsp cashews. Serve with 1/2 cup fruit.
