Recipe Ingredients for Cashew Beef Stirfry

890 g lean beef
1/3 c pineapple juice
30 ml canola oil
120 ml rice wine vinegar
1/4 t black pepper
1/2 t toasted sesame oil
1 t soy sauce
1 T brown sugar
1 medium onion
1 medium carrot
1 green pepper
1 red pepper
250 g pineapple chunks
100 g cashew

Recipe Directions for Cashew Beef Stirfry

  1. Trim and slice across grain beef into bite sized strips. Combine pineapple juice, oils, vinegar, seasonings, and soy sauce. Marinate beef in this for ~2 hrs to overnight.

  2. Clean and cut vegetables into bite sized pieces. Vary the cuts so you have thin strips, cubes and bite sized medallions to give a pleasing appearance to the finished product.

  3. Heat a large wok, spraying the surface with a little oil if needed. Strain the beef from the marinade, reserving marinade for later, and stir fry until mostly done. Remove from wok and set aside, covered.

  4. Add vegetables in order and stir fry until well heated. Add pineapple and enough reserved marinade to coat vegetables. Heat until most of the liquid evaporates.

  5. Return beef to the wok just long enough to combine.

  6. Serve over rice.
