Carrot soup with Moroccan inspired spices

Recipe Ingredients for Casablanca Carrot Soup

3 tbs. olive oil
2 lb. carrots
1 small onion
4 cloves garlic
1 tsp. Cinnamon
1 tsp. Turmeric
1 tsp. Cumin
1/2 tsp. Red Pepper Flakes
8 cups water
4 cups carrot juice
2 1/2 cups cooked Brown Rice
1/2 cup chopped fresh mint
2 tbs. lemon juice
2 tsp. lemon zest
4 tbs. slivered almonds

Recipe Directions for Casablanca Carrot Soup

  1. Heat oil in large pot over mediumhigh heat. Add carrots, onions, garlic, cinnamon, turmeric, cumin, and red pepper flakes; sauté 3 minutes. Add broth, and bring to a boil. Reduce heat to medium-low, cover, and simmer 30 to 35 minutes, until carrots are very tender.

  2. Purée carrot mixture with carrot juice, rice, and mint in blender until smooth. Stir in lemon juice and zest. Return to pot to warm, if necessary. Serve hot or chilled, garnished with almonds and mint.
